{I actually wrote this yesterday, but couldn’t get enough of a connection to post it…….}
Here I am again. I had planned to take the day off, but while signing in to like another blog I read, it dumped me into my dashboard. *sigh* I think it has the most issue with sites that have their own url.
Let’s see……. where were we……………. Yesterday I didn’t make it to town. Hunny now doesn’t want the boots because he doesn’t think we have space. I had gotten a shoe tote for outside, which I reminded him. I’m not sure he’s entirely convinced. I think I’ll hold off on that for a few more days.
It’s going to be a busy weekend. He’s got a closet repair to make, which, in theory, will give us more critical space for the kids’ stuff. And we need to take a look at more permanent storage solutions and see what we can do to additionally utilize the little bit of space we do have left. I may be using the back of my truck for storage, and then just emptying things out when we go shopping in the big town.
And, we need to get things more settled for our little satellite tv thingy. 😀 He needs a gizmo for the widget so we don’t have to drag it across the street to get a good signal. 😆 More on that later. {I had to drive to get it; nearly to Virginia. Had it been a little earlier in the day and a little more time to map it, I would have driven across the border just so we could say we’ve been there. My one sister had taught school in a town in Va that is, according to my parents, about 30 minutes from us.}
Anyhow. Today looks like more laundry, a run, and a trip into the little town to get something for dinner. I am totally not loving the limited food space. I’m thinking of doing a smaller Sam’s run and then just packing smaller portions and freezing the meats for individual smaller meals. It’s a totally different way of thinking, particularly since the oven in RVs is generally wee tiny, which means a likelihood of doing things in smaller batches. I suppose the kids could eat earlier………

Hubby & I like to save money so we buy hamburger (ground beef) in bulk, then break it down & freeze it in individual meal portions (since there are just the 2 of us). I learned this tip from somewhere recently & tried it out. When I brought my hamburger home this last time, I fried it all up in 1 big pan, then I measured out 2 cups of cooked ground beef (2 cups = 1 lb) into smaller freezer bags for freezing. The cooked ground beef takes up less room in your freezer (space saving) & it’s so much easier to prepare a meal like spaghetti when the meat is already cooked since you can just add it to the pot/pan the sauce is cooking in to warm the meat up. Hope this tip is helpful to you & your limited space for storage.
This is why we buy a side of beef as a minimum….. In this case, a pound of hamburger is not a huge deal. I used to wait until we had the one store having a 10 lb sale and do the same thing, except I didn’t fry it up. We like the option of doing different things with it. I am not sure I actually could fit 10 lbs of hamburger in the freezer, even if its fried up.
Just like I won’t be able to not go to the grocery store to get milk every other day, this is another issue that won’t change until we get back into a house with a full size fridge and freezer. Not to mention, I can’t really bake, either, because we don’t have an oven large enough. For 2 people, you could get away with a lot more; for us, it’s like an easy-bake oven which more or less= useless. I can’t even get more than 4 chicken breasts in there. Really.
It is what it is, though. 🙄

Meh. I am always open to suggestion. 🙂 Cooking for a larger family has its own set of variables, but when you combine that with an rv, it just makes everything wonky.
The freezer isn’t big enough to even fit a pizza; given the small oven which won’t fit the pizza anyhow, one can see how the whole thing fits, lol. It just doesn’t necessarily fit a wIth family, lol. If I thought I could get away with it, I’d consider a small fridge, even though I still need freezer space.
In reality, since I’m running to get milk every other day, it’s mot too much of an issue to get more meat. I think I’m still sick over losing my whole freezer.
And, some of this is the lack of oven means we’re having to cook a lot differently than we’re used to. I have to hope it will sort itself out……:-)
